Dan Bidinger

Dan Bidinger is a master of precision in the world of culinary knife making, dedicated to pushing the limits of cutting performance and craftsmanship. Growing up in Alaska, his appreciation for well-made tools was shaped by hands-on experience in construction and high-access rigging work. After more than a decade abroad in Dubai, he returned to the U.S. in 2018, setting up shop in Sequim, Washington, where he refined his skills and fully immersed himself in the craft of artisanal knife making. While largely self-taught, Bidinger has drawn inspiration and insight from some of the industry’s most respected artisans, constantly refining his techniques to create knives that are as functional as they are visually stunning.

With a relentless focus on performance, Bidinger’s knives are designed for chefs and serious home cooks who demand precision and consistency. His hallmark is a flawless fusion of balance, cutting efficiency, and top-tier craftsmanship, ensuring every blade feels like a natural extension of the hand. Among his innovations is the "B-grind," a specialized compound blade geometry that enhances food release and reduces friction, allowing for effortless slicing. Each knife he produces is an exercise in meticulous attention to detail, from the grind to the finish, making his work highly sought after by those who value both aesthetics and performance in their kitchen tools.
