Chef Knife 225mm GoMai 12419 Damascus Koa & TruStone

$1,708.00

For those who appreciate Martin's renowned "Silverline" GoMai steel, this new creation can be seen as an enhanced "Silverline Plus." The blade showcases a stunning black-etched finish, allowing the 30-layer nickel Damascus to shine through in a mesmerizing, lightning-strike pattern. The detail is both striking and intricate, making this knife as visually captivating as it is functional.

Crafted as a chef’s knife, this blade features Martin Huber's signature profile with a 5-layer GoMai construction. The cutting edge is crafted from 1.2419 high-carbon steel, hardened to an impressive 65 HRC for exceptional edge retention and sharpness. The convex grind, coupled with a brute de forge finish, acid-etched patina, and matte polish, creates a balanced blade with a perfect marriage of rugged elegance and high performance.

With an overall length of 344mm and a 225mm cutting edge, this knife is designed for versatility and control in the kitchen. The spine thickness tapers from 3.54mm at the heel to just 0.95mm near the tip, allowing for precise, nimble cuts despite the knife’s impressive size. The blade height at 55mm provides excellent knuckle clearance, ideal for both professionals and home chefs who value ergonomic comfort.

Weighing only 172 grams, the knife feels remarkably light and agile, while its exceptional balance enhances control and reduces fatigue during prolonged use. The handle is a beautifully tapered, full-tang Western design crafted from premium koa wood and TruStone, providing a comfortable and secure grip. This ambidextrous handle is designed to fit perfectly in either hand, making it versatile for a wide range of users.

This piece represents the pinnacle of craftsmanship, handcrafted by one of Austria's most talented blacksmiths. With a blade that glides fluidly across the board and a design that is as stunning as it is functional, this chef’s knife is more than a tool—it's a work of art, built for those who demand performance and aesthetic excellence in equal measure.

Product Care:

Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.

Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.

Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or one of the many premium reactive German and Swedish steels are susceptible to rust if not properly cared for. In this case we advise that you keep the knife dry between uses and when storing the knife for longer periods wiping the knife blade with Tsubaki oil or another food safe oil is a wise choice. This will not stop a patina forming on the blade, but it will stop rust. A patina can be a beautiful personal feature on your knife and helps to stop rust forming. So, dry your knife regularly between uses, store in a dry place and apply some Tsubaki oil from time to time when storing for long periods.

Handle Care: If you have a knife with a non-stabilised wooden handle, you can apply Tsubaki oil or another food safe oil to your handle from time to time. Food safe wax can be applied to both stabilised and no-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
