HADO X Manaka X Adonis | Bunka 170mm Blue #2 Warikomi Stainless Clad

$571.00

It doesn't get more unique than this. Forged by Kisuke Manaka, the fifth-generation artisan at Manaka Hamono Tanrenjo, ground and sharpened by

Tadataka Maruyama the master sharpener at Hado Knives Atelier and with handles designed and crafted by Europes very own Antoine Kniamen of Adonis Forged Arts.

The blades are forged warikomi style and completed with Kisuke-san's signature hammered texture and black Kurouchi. Warikomi is like a hybrid of Honyaki and SanMai. The core steel is placed into a U shaped piece of cladding material and then forge welded closed. This means that the super hard core does not actually reach the spine. The result is a more resilient spine and super sharp edge, as is the case with a Honyaki blade.

The bevels, spine and heel have all been polished and sharpened by Tadataka-san, they feature the HADO classic wide flat bevels, round polished spine and facetted polished heel. Beautifully executed, the result is a fantastic high performance kitchen knife.

Antoine, tasteful as always, gave these beautiful knives an octagonal ebony handle with heirloom fit distressed brass bolster and signature name plate. Its a beautiful paring with the striking black Kurouchi finish on the blade.

This completely unique short run series is a truly special exclusive to Modern Cooking and is made possible by the exceptionally talented craftspeople at Manaka Hamono Tanrenjo, Hado Knives and Adonis Forged Arts.

Product Care:

Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.

Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.

Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or one of the many premium reactive German and Swedish steels are susceptible to rust if not properly cared for. In this case we advise that you keep the knife dry between uses and when storing the knife for longer periods wiping the knife blade with Tsubaki oil or another food safe oil is a wise choice. This will not stop a patina forming on the blade, but it will stop rust. A patina can be a beautiful personal feature on your knife and helps to stop rust forming. So, dry your knife regularly between uses, store in a dry place and apply some Tsubaki oil from time to time when storing for long periods.

Handle Care: If you have a knife with a non-stabilised wooden handle, you can apply Tsubaki oil or another food safe oil to your handle from time to time. Food safe wax can be applied to both stabilised and no-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
