This 240 mm Signature Series gyuto is a particularly complete expression of Mark Cordina’s work. Its confident profile, tapered convex geometry and exceptionally comfortable faceted handle give it the presence of a custom collector piece while keeping the experience firmly connected to performance on the board.
At the centre of the five-layer Go Mai blade is an Aogami Super cutting core, hardened to 65 HRC and held between nickel interlayers and bright 304 stainless-steel cladding. A deep black coffee etch reveals subtle alloy banding through the carbon steel, set against the cleaner, brighter character of the nickel and stainless layers. The convex bevels are brought to a smooth, silky satin polish that helps reduce drag as the blade passes through food. The spine tapers from 4.34 mm at the heel to 0.95 mm near the tip, supporting a strong heel and increasingly fine forward geometry.
The custom hidden-tang handle combines stabilised ebony, highly figured Tasmanian blackwood and Mark’s signature hand-stippled bronze spacer. Complex museum-fit joinery brings the materials together with remarkable precision, while the carefully shaped ergonomic facets make the handle exceptionally comfortable in the hand. The quality is visible in the seamless transitions and crisp junctions, but it is equally apparent in how naturally the handle locates and supports the grip.
Mark’s hand-engraved signature appears on the blade face alongside the Cordina Customs maker’s mark. Together with the dark etched core, bright cladding, silky convex bevels and sculpted timber handle, it gives the knife an identity that is recognisably his. Presented in a fitted wooden storage box, this is a singular gyuto defined by high-performance geometry, assured board action and exceptional finishing work.

We process orders 5 days a week (Monday - Friday) and ship from our shop in Sydney, Australia. We ship with FedEx, UPS and DHL.
We are happy to offer free international shipping on a variety of orders depending on location and order value.
Free Shipping Regions and Minimum Order Values
For Australia and New Zealand the minimum is $500AUD. For the rest of the world it is approximately €1000EUR. The discount is applied automatically when you reach the minimum cart value at checkout.
Returns
If you're not entirely happy with your purchase, you can return it within 14 days of delivery for a refund. The item must be in its original condition with all original packaging.

Faulty or Damaged Items
You must notify us within 5 business days of receiving your order. Photographic evidence of damage is required. Once approved, Modern Cooking will cover return shipping costs.

Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
