Antoine Kniamen forges alone near Annecy in eastern France, and KAZE — Japanese for wind — is his top performance line, where cutting is the first consideration and everything else answers to it: he forges the bevels in close to their final geometry before grinding them, which is both a more precise and a more efficient route to the shape, and he keeps them low. This 250mm gyuto is one of a kind, and it carries that thinking into a three-layer composite, or san-mai, construction, with a multi-bar twist damascus cladding of Antoine's own making, forged from 1095 and 15N20, over an Apex Ultra core.
A spine of 3.82mm at the heel tapers through 1.8mm at mid-blade to 1.03mm behind the tip, and at 204g the knife is light for a 250mm blade — composed and stable through the rear, increasingly deft toward the front. The convex bevels carry it through dense ingredients with very little drag and release food cleanly, and 60.48mm of height at the heel keeps knuckles well clear of the board. The core is Apex Ultra, the low-alloy carbon steel built around a high tungsten content by Larrin Thomas, Marco Guldimann and Tobias Hangler, and Antoine's heat treatment takes it to 66 HRC, for a keen edge that holds through months of heavy use and still comes back readily on a stone. The finish follows the forging — textured kurouchi from the spine down to the top of the bevels, with the pattern showing through it, while the bevels themselves are taken down on stones to an even, consistent satin and then deeply etched to draw the twist damascus out in fine contour lines, the Apex Ultra core emerging as a clean line along the edge.
The handle is a mono-block octagon in Antoine's classic style, cut from green Raffir Alume — an aluminium mesh set in translucent coloured resin, so the metal reads as a shifting three-dimensional grain beneath the surface rather than a pattern printed on it — and finished against a bead-blasted stainless bolster and name plate. The octagonal section is ergonomic and comfortable in the hand, and the knife balances directly at the maker's mark.

Returns
If you're not entirely happy with your purchase, you can return it within 14 days of delivery for a refund. The item must be in its original condition with all original packaging.

Faulty or Damaged Items

Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
