We've known Simon Krichbaum since he was an apprentice under Martin Huber, and the friendship is half the reason these knives exist — he's a big-hearted, endlessly creative maker with the rare discipline to match his ambition. His signature profile and geometry do the heavy lifting, ergonomics and performance already dialled in, premium steels as standard. So the fun part — the part we obsess over together — is the handle, the cladding, the finish. Simple, premium, pragmatic, and made for the pure joy of cooking. Edition 05Gyuto Suminagashi Clad AU Edition 5

This next edition is built around a beautiful pairing of steel and timber. The blades will feature a twist Suminagashi cladding over an Apex Ultra core — the twist pattern giving real movement and depth, the Apex Ultra bringing the performance the line is known for. The handles will be takedown, kept as simple mono blocks so that nothing competes with the two things we want front and centre: the pattern in the steel and the character of the wood.

Apart from Simon's exceptional work at the forge, the wood is what makes this edition special. We're using two rare Tasmanian timbers, Huon Pine and Blackwood, collected while I was in Tasmania earlier this year visiting Jason Ellard and Tobi Bockholt, better known as Metal Monkey. The Huon Pine was a gift from Jason — which gives this run a story as well as a look, each handle carrying a little of that trip and that friendship. Simple, premium, and quietly personal, it's very much in the spirit of the line.

This is the plan as it stands today, and there's still detail to settle as the design firms up and the work moves to the bench. As always, we'll let the steel, the timber and Simon's hand guide the finer calls along the way.

Every MCx line begins with a relationship — it's one of the core values that drives MCx and Modern Cooking as a whole — and the MCx Krichbaum line is a clear expression of that. We've followed Simon Krichbaum's work since his apprentice days under Martin Huber, and watched him grow into one of the most exciting makers of his generation. He's a singular character with a big heart, and there's a truth to the idea that creativity is fuelled by love — working with Simon is genuinely easy and fun. That warmth doesn't come at the expense of discipline, though. He'll happily chase a challenge, but he knows exactly what's realistic and achievable, and that balance of ambition and restraint is what makes the partnership work.

The MCx Krichbaum line itself is deliberately kept simple. Each batch is a fresh design from Simon's workshop, and much of what makes it sing is already built in: the blade profile and geometry are defined by Simon's signature, which is exceptional in both ergonomics and performance, and premium steels are a given — Apex Ultra among them, though we're never locked to a single choice. With the fundamentals that good from the outset, our design conversations tend to focus where they can add the most: the handle material and design, and the choice of cladding and finish on the blade. Material choices drive a lot of these decisions. The result is pragmatic, premium and unfussy — beautifully made knives, nothing overwrought, designed around what actually makes a great knife a joy to use.
