A stunning 240mm Gyuto meticulously crafted by renowned Austrian blacksmith Simon Krichbaum. This remarkable blade exemplifies the perfect blend of functionality and artistry. The handle, made from luxurious royal ebony and featuring a ray skin bolster, not only provides an exceptional grip but also adds an element of refined elegance. The blond wood of the royal ebony, interspersed with subtle dark streaks, contrasts beautifully with the unique texture of the ray skin, making this knife both a practical tool and a stunning work of art.
At the heart of this Gyuto lies the premium Apex Ultra core steel, celebrated for its superior hardness and edge retention. Boasting an impressive HRC of 66, the cutting edge maintains its sharpness through extensive use, making it an excellent choice for both professional chefs and culinary enthusiasts. The blade is adorned with a deep etched Damascus cladding, crafted from S700 Mild steel, 80crv2, and nickel. This intricate pattern not only enhances the knife's strength but also adds a mesmerizing visual appeal.
Every aspect of this knife has been thoughtfully designed, from its precise dimensions to its exquisite finish. The 240mm edge length, paired with a spine that tapers from 3.65mm at the heel to 1.45mm near the tip, offers perfect balance and control for slicing, dicing, and chopping. The blade's acid-etched, textured, and Kasumi finish enhances both its aesthetic appeal and performance, providing a smooth yet sturdy cut. Weighing just 212g, this Gyuto is lightweight yet impactful, promising to be an indispensable addition to your culinary collection.

Product Care
Product Care
Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
