Gyuto 200mm Dammy Clad ApexUltra, Birch & Brass
Gyuto 200mm Dammy Clad ApexUltra, Birch & Brass
By Karol Karyś
No longer available
A stunning, high-performance K-tipped Gyuto from Polish artisan bladesmith Karol Karyś. Aggressively tapered, the blade traverses from almost 5mm down to a needle like tip. Convex ground, the blade geometry is designed to divide material on all axis’s. Apex Ultra at the core mean the edge is super tough and will retain its edge for many hours, days, and months of reliable cutting. The edge profile is gently radiused for a smooth cutting action.
Aesthetically speaking this is a stunning piece of work. Karol continues to develop his style when it comes to laminated steels, merging his signature textures with more and more elaborate laminated patterns. A striking combination of pitted textures, contrasting black and silver hues with brass accents and the incredible organic figure in the Karelian Birch burl.
Finally, Karol has updated his maker’s mark. Shrouded in mystery, he has chosen not to explain the new mark, but this blade is one of the first blades to have the new mark.

Product Care
Product Care
Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
