Fredrik Spåre 220mm Honyaki blade forged in 26c3 "Spicy White" steel. If you’re not familiar with the steel, 26c3 is very similar to the Japanese white or shirogami steel, which is known for its purity. 26c3 has additional chromium alloy, which gives it slightly better corrosion resistance. It’s a very nice quality steel and perfect for forging Honyaki blades.
This blade is hard! 66HRC at the edge and it’s an absolute razor. The profile is a classic Gyuto shape, a decent flat section extends out of the heel of the blade and runs about 30% of its length before subtly curving towards the tip. The geometry is very precise. The spine tapers very consistently (3.5mm Heel, 2.5mm Mid, 1.2mm Tip) and the convex grind is super consistent beginning about 1cm from the spine and gently curving to the edge.
The octagonal handle features perfect fit and finish and the hammer dented brass bolster is a beautiful touch. Masur birch pairs very nicely with the hand sanded satin finish on the blade. A very nice Honyaki blade, amazing value for a knife of its calibre.

Product Care
Product Care
Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
