Gyuto 260mm Walkschliff Monolithic All Steel Integral Western

$5,381.00

Working with Benjamin Kamon affords us the opportunity to bring our customers something extraordinary. Every knife that Benjamin produces is something special, but from time to time we get to collaborate with Benjamin to create something that is a little extra and falls into the masterpiece category. This piece firmly falls into that category.

The Kamon monolithic, all steel Integrals are already a master class in blacksmith skill. However, taking things a step further, Benajamin has created this one of a kind version with removable Amboyna burl scales.

The blade is a clean, walkschliff ground gyuto 260mm with an aggressive distal taper. As with any Kamon knives blade the knife has been ground on a water cooled, wide belt grinder, which results in very consistent bevels, easy maintainability, and incredible cutting performance.

The handle is a punched and drifted, fully forged grip, with custom shaped, takedown scales in Amboyna burl and 10,000-year-old wrought iron. The combination of brute de forge around the handle and amboyna burl is a beautiful pairing with the clean finish on the blade and completing the ensemble Ben has tempered the steel around the pinch point giving the knife a very contemporary touch of blue-purple, which also helps to protect the steel.

The knife was commissioned on behalf of a very special customer who has asked us to handle the sale of his collection as he aims to invest in a new restaurant. The knife was virtually un tarnished, but Benjamin has fully refurbished the knife and as such it is in completely new condition. This is an exceptionally rare piece and an absolute collectors item.
