Timo Verschuren is a knifemaker from Maastricht, in the south of the Netherlands, working under the name Hardent. He forged, ground, and sold his first knife at thirteen, and by his late teens had turned a childhood fascination into a full-time craft. Today he builds high-performance kitchen knives entirely by hand—thin at the edge, refined in geometry, and marked by pronounced distal tapers that make them cut effortlessly and precisely. He pairs traditional blacksmithing with an engineer's eye for clean grinds and honest materials, from high-carbon alloys to wrought-iron cladding and damascus. These are not production knives: each is made in small numbers or to order, built to be used every day and kept for generations. We are honored to collaborate with Timo on our MCX design series.

Timo Verschuren's path into knifemaking began at the age of eleven, on a family holiday in France, where a blacksmithing demonstration caught his imagination and never let go. Not long after, he bought his first Opinel—a modest, elegant tool that opened a lifelong relationship with blades. Determined to learn on his own terms, he set about building both his skills and his workshop from nothing: a wooden homemade belt grinder, a length of railroad track pressed into service as an anvil, and the patience to teach himself the fundamentals. By thirteen, he had forged, finished, and sold his first knife.

At fifteen his focus turned to the kitchen. The delicacy of a chef's knife, and the precision its geometry demands, drew him in completely. For Timo, the true beauty of a blade lies in how it performs and how long it lasts—a conviction that has shaped every knife since. His ambitions grew with his skill. At seventeen, still in high school, he reinvested everything he earned back into the craft and bought his first power hammer, opening the door to more advanced forging: intricate damascus patterns and san mai constructions that pushed his sense of both artistry and control. By eighteen he had made knifemaking his full-time profession.

Now working from his studio in the south of the Netherlands, Timo builds knives that are forged, ground, and finished entirely by hand. He combines traditional blacksmithing with an engineering mindset—clean geometry, precise grinds, and materials chosen for both performance and character. His kitchen knives are known for their thin edges, refined profiles, and pronounced distal tapers, details that make them a genuine pleasure in the hand and a clear expression of his function-first philosophy. His range runs from minimalist chef's knives to complex custom builds featuring advanced constructions and rare materials, including modern high-performance carbon alloys, wrought-iron cladding, and hand-forged damascus.

His approach is rooted in simplicity, efficiency, and a quiet respect for the person who will use the knife. Every design is user-focused and timeless, balancing elegance with practicality, and built to be approachable for cooks at every level. Apex Ultra is one of the most carefully engineered non-stainless kitchen knife steels in modern circulation — a steel designed from the ground up specifically for handmade knives, rather than borrowed from another industry. It was developed by metallurgist Larrin Thomas together with smiths Marco Guldimann and Tobias Hangler. It is a low-alloy carbon steel — roughly 1.25 percent carbon, 2.6 percent tungsten, 1.5 percent chromium and a 0.4 percent vanadium addition, with manganese and silicon kept low. That composition is tuned for high purity and a fine, evenly distributed mix of chromium-enriched iron carbides, tungsten carbides and vanadium carbides — the structure that lets it hold a very hard edge without the coarse carbides or plate martensite that sap toughness in other high-hardness carbon steels.

What this means for a cook is unusual permission. Apex Ultra carries very high toughness in the 66+ HRC range — the highest of any knife steel its developers have tested at that hardness — so you can ask a maker to grind it thin and run the heat treatment hard, and the edge will hold far longer than the carbon steels smiths usually forge, without microchipping. It forges and forge-welds much like 52100 or 1.2562, sharpens cleanly on natural and synthetic stones without needing diamond plates, and its modest chromium slows patina a little — though it is not stainless and should be cared for as a carbon steel.

Apex Ultra has become a signature steel of the European maker community, and the Modern Cooking catalogue carries an unusually deep bench of smiths working in it. Tobias Hangler himself heads that group, alongside Marco Guldimann, Benjamin Kamon, Martin Huber, Jonas Johnsson, Karol Karyś, Birch & Bevel, and MCx. It is genuinely a step forward — one of the relatively few cases where the marketing claims and the underlying metallurgical data are saying the same thing.

1.2419 is the German tungsten-chromium tool steel that sits a clear step above the simple carbons in alloy content, with about 1.05 percent carbon, 1.0 percent chromium, and 1.1 percent tungsten. It is closely related to 1.2519 (which adds vanadium) and to its leaner sub-variant 1.2419.05.

In a kitchen knife it runs at 63–64 HRC, sharpens cleanly, and produces an edge with notably better wear resistance than W2 or 80CrV2. The W- and Cr-rich carbides do real work; toughness is good for the hardness, and patina behaviour is moderate. It is a steel that rewards a maker who can dial in heat treatment and grain control.

European bladesmiths have used 1.2419 for kitchen and outdoor knives for decades. It is well respected in the Solingen tradition and remains a credible choice for a refined carbon-edge knife. Among the makers Modern Cooking carries, Martin Huber, Karol Karyś, Fredrik Spåre, Michał Lipiński, and Birch & Bevel work in this steel. The community sometimes discusses 1.2419 in the same breath as Aogami #1 — not chemically identical, but in a similar performance neighbourhood.

Blade construction

Laminated Steel

A category covering knives built from multiple layers of different steels forge-welded together. The hard cutting steel is sandwiched between softer outer layers (cladding) that protect the core, add toughness, and often contribute visual contrast.

The most common laminated constructions in the Modern Cooking catalogue are:

SanMai (三枚) — three layers: hard cutting steel in the centre, softer cladding on both sides. The traditional and most common form.

GoMai (五枚) — five layers: a hard core, two intermediate layers, and two outer layers. Adds visual depth and structural complexity.

KuMai (九枚) — nine layers: similar logic, with more cladding layers for additional pattern and structural variation.

GoMai and KuMai are often chosen not only for the additional layers and visual depth, but also because the intermediate layers can act as a nickel diffusion barrier — limiting carbon migration out of the core into the cladding during forge welding, and protecting the core's intended carbon content through the heat of the forging process.

In all cases the cutting performance is determined by the core steel; the outer layers are cosmetic and structural. The lamination contributes corrosion protection (when a stainless jacket clads a carbon core), reduced reactivity, and the visible boundary between core and cladding that gives the knife its character.

Blade construction

Mono Steel

A knife forged from a single piece of steel — no laminations, no clad layers. The simplest and most direct construction. The entire blade is the cutting steel, with no softer outer jacket to protect or contrast it. Most contemporary Western kitchen knives in carbon and stainless steel are mono-steel constructions, as are honyaki and most European bladesmith work.

The trade-off is straightforward: mono-steel knives are easier to forge, sharpen, and reason about, but the entire blade carries the cutting steel's properties — including its reactivity if it's a clean carbon. There is no soft jacket to protect a more brittle core from impact, so the heat treatment and geometry have to do all the work.
