Gyuto Apex Ultra Stainless GoMai Masur Edition

Designed for both utility and elegance, the stainless-clad Apex Ultra composite embodies the ideal balance of extreme cutting performance, edge retention, and durability. Its satin-polished finish, paired with an acid-etched surface, reveals the striking interplay of carbon steel, stainless steel, and nickel layers, making it as visually captivating as it is functional.
The blade is perfectly balanced with a forge-tapered design that delivers satisfying heft above the heel while remaining ultra-thin at the tip. This thoughtful construction, combined with convex geometry and a razor-thin edge, makes the blade an absolute pleasure to work with. Crafted from Apex Ultra steel, it offers a super-tough, razor-sharp edge that maintains its sharpness even after extensive use.
Complementing the blade is a classic Rokaku Hanmaru Birch & Bevel handle, crafted from a refined combination of Masur birch, Micarta, G10, and brass. This sophisticated pairing not only adds to the knife's aesthetic appeal but also provides a comfortable and secure grip. The result is a stunning, timeless kitchen tool that will delight cooking enthusiasts and professional chefs alike.
With its exceptional performance, durability, and refined style, this knife is an indispensable companion for any kitchen. Its masterful design ensures precise cuts, while its enduring elegance makes it a statement piece worthy of admiration.

Product Care:
Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or one of the many premium reactive German and Swedish steels are susceptible to rust if not properly cared for. In this case we advise that you keep the knife dry between uses and when storing the knife for longer periods wiping the knife blade with Tsubaki oil or another food safe oil is a wise choice. This will not stop a patina forming on the blade, but it will stop rust. A patina can be a beautiful personal feature on your knife and helps to stop rust forming. So, dry your knife regularly between uses, store in a dry place and apply some Tsubaki oil from time to time when storing for long periods.

Handle Care: If you have a knife with a non-stabilised wooden handle, you can apply Tsubaki oil or another food safe oil to your handle from time to time. Food safe wax can be applied to both stabilised and no-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
