This geometry features significantly less surface area due to the hollowed-out sections above the bevels. The result is significantly improved food release and reduced friction. Typically the geometry is created by grinding the hollows on a belt grinder, but in this case Leszek has forged them by hand. The result is a particularly stunning and unique piece of precision artistry. The narrow bevels are thin and convex ground. Exceptional food release and minimal friction should make for a very enjoyable cutting experience, while also maintaining the integrity of the produce you cut with the knife.
One of the most iconic designs around featuring Leszek's Graphite integral bolster, forged in black etched GoMai steel and completed with a stunning Claro Walnut handle. This is heirloom design at its best.
Don't be fulled by the corse looks. Every surface is smooth to the touch and the joinery around the handle is seamless. Leszek is talented and thoughtful craftsman who considers the details to ensure comfort and performance.

Product Care
Product Care
Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
