Nakiri 170mm Damascus Clad AU Takedown

$1,661.00

German blacksmith Oliver Märtens has crafted a remarkable Nakiri that combines innovative design with superior functionality. This high-performance kitchen knife features a unique octagonal takedown handle, a new design that allows for easy maintenance and adds an element of cool sophistication. The handle is made from durable linen micarta and hand-milled anodized aluminium front and rear encaps, providing both aesthetic appeal and a secure grip. The removable handle design not only enhances the knife's practicality but also makes it a standout piece in any kitchen collection.

Known for its vegetable slicing prowess, this Nakiri boasts an edge length of 174mm. Märtens has ensured the blade is finely balanced with a beautifully tapered spine, gently narrowing from 3.45mm at the heel to 1.32mm near the tip. With a blade height of 69mm, the knife provides ample knuckle clearance for efficient chopping and slicing. Weighing in at just 246g, it is lightweight and nimble, yet sturdy, making it ideal for prolonged use without causing hand fatigue.

Constructed from Apex Ultra steel, the Nakiri's cutting edge offers exceptional sharpness and durability, with a hardness rating of 66 HRC. The blade is clad in a 200-layer Damascus that features a strikingly intricate pattern. Finished with a satin polish, the blade exudes a sleek, refined appearance. The convex grind ensures optimal cutting performance, allowing for precise and effortless slicing. Märtens' meticulous craftsmanship and innovative design culminate in a knife that is both highly functional and visually striking, making it a prized tool in any kitchen.

Product Care:

Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.

Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.

Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or one of the many premium reactive German and Swedish steels are susceptible to rust if not properly cared for. In this case we advise that you keep the knife dry between uses and when storing the knife for longer periods wiping the knife blade with Tsubaki oil or another food safe oil is a wise choice. This will not stop a patina forming on the blade, but it will stop rust. A patina can be a beautiful personal feature on your knife and helps to stop rust forming. So, dry your knife regularly between uses, store in a dry place and apply some Tsubaki oil from time to time when storing for long periods.

Handle Care: If you have a knife with a non-stabilised wooden handle, you can apply Tsubaki oil or another food safe oil to your handle from time to time. Food safe wax can be applied to both stabilised and no-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
