Lew Griffin is an artisan that has a truly distinct style, defined by his focus on the “S” grind, his unique high-performance profiles, and his beautiful, ergonomic handles. His knives are iconic, they stand out in the crowd and more importantly they cut!
This lovely clean 210mm Gyuto features an integral bolster with a beautiful facetted shape that flows into the handle flawlessly. The steel is beautifully polished with a silky satin finish, which makes for a very classy pairing with the stabilised Yew wood handle and saya. A touch of brute de forge around the spine completes this instant classic!
A red streak through the beautiful golden brown Yew wood highlights nature’s uncanny ability to outshine even the most talented artist, but Lew has done what is often the most challenging task for an artist and stepped aside.
This is one of those minimalist pieces that highlights the beauty that is found when an artisan lets his materials sing, only adding what is necessary. Which, in this case, is the form. High performance geometry and beautiful ergonomics.

Product Care
Product Care
Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
