Gyuto 240mm Wrought Iron Clad 135Cr3 Thuya Burl

Known for his incredible attention to detail and a focus on stone finished bevels. Milan Gravier continues to deliver with this beautiful 240mm Gyuto. The Kasumi polish is perfection, a delightful mirror haze with subtle alloy banding details peeking through.
The forged geometry is outstanding! A thin razor-sharp and toothy edge, zero ground and subtly convexed for extremely good cutting performance and food release. To produce such incredibly perfect Kasumi on a convex bevel takes a rare talent.
Milan's wrought iron SanMai are perhaps considered his more entry level knives. Designed for everyday use, but let's not kid ourselves. His eye for detail and understated style makes for a very beautiful piece of function art. The subtle beauty of the Kasumi polish paired with an incredible contribution by mother nature, in the form of the Thuya Burl handle, make this a stunning and beautiful culinary tool.

Product Care
Product Care
Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
