A Singular Masterpiece: Honyaki Gyuto by Jonas Johnsson & Naohito Myojin
A rare fusion of European craftsmanship and Japanese precision, this one-of-a-kind Honyaki Gyuto represents the pinnacle of cutting performance, artistry, and exclusivity. While the original limited series showcased extraordinary skill, this singular piece stands apart—featuring a superior polish and a handle-saya pairing that elevates it to an entirely new level of refinement.
The blade is hand-forged by the renowned Jonas Johnsson of Isa Smedjan, one of the world’s finest Honyaki smiths. His impeccable heat treatment, meticulous forging, and deep understanding of steel have earned him a reputation among top craftsmen, including Benjamin Kamon and Milan Gravier. The result is a blade with exceptional edge retention, resilience, and an unmatched cutting feel.
Once forged, the blade undergoes the expert hands of Naohito Myojin, a legend in precision grinding and finishing. With a portfolio that includes collaborations with Konosuke Sakai, Hashimoto Shoichi, and Satoshi Nakagawa, Myojin’s skill transforms great blades into true masterpieces. For this singular piece, he has applied an even more refined polish, completed entirely by hand, enhancing both the visual brilliance and the seamless cutting experience.
Forged from 26C3 carbon steel—often referred to as “Spicy White”—this knife achieves an extraordinary balance of sharpness, hardness, and longevity. Comparable to Japanese White #1 steel, yet offering superior edge retention and fine carbide structure, it is the ideal medium for Honyaki forging. Under Jonas Johnsson’s meticulous heat treatment, the steel reaches remarkable hardness while maintaining resilience, ensuring long-lasting sharpness with a truly refined edge.
The differential hardening process creates a striking hamon, a unique visual hallmark of the blade’s craftsmanship. No two hamons are alike, making this blade an individual expression of the Jonas’s artistry.
Complimenting this stunning blade is an incredible handle and saya combination, crafted from an exquisite and rare piece of Western Myall. Known for its deep, mesmerizing grain and remarkable density, Western Myall enhances both the visual and tactile experience. Stainless steel accents further elevate the design, creating a perfect balance of elegance, durability, and ergonomic excellence.
This one-of-a-kind Honyaki Gyuto is more than just a knife—it is a functional work of art, blending European and Japanese mastery with a level of refinement rarely seen. Whether in the hands of a professional chef or a dedicated collector, it offers an unparalleled experience, both in performance and aesthetics.
A singular opportunity to own something truly unique—this masterpiece is the only one of its kind in the world.

Product Care
Product Care
Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
