Aogami Super at the core and a stainless cladding this knife represents workhorse at its best. Thick spined for stability, rigidity, and durability, with a thin and sharp edge. Konstantinos Noulis of Nouko knives really knows what he is doing and has done a beautiful job forging this 225mm Gyuto. Satisfying weight and balance, paired with an undeniably high-performance edge profile. We are confident that this will be a very decent kitchen all-rounder, perfect for daily use.
The house forged GoMai steel features a nickel silver diffusion barrier between the core Aogami Super Steel and the stainless cladding, which makes for a striking contrast effect against the black etched core steel. Above the bevels you will find unique, black Kurouchi finish that balances out the look and gives the knife a beautiful authentic look.
The handle, which is made from English Elm and features a stunning figure is paired with a museum fit copper bolster. It’s a beautiful combination and the handle, shaped in Konstantinos’s signature western style is very comfortable in the hand.

Product Care
Product Care
Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
