Performance comes first as is expected, but very few artisans are as thoughtful as Antoine Kniamen when it comes to the aesthetics. Little details like the beautiful, engraved name plate or the hand painted forced patina with its cloud like pattern make an Adonis blade a unique piece of culinary art.
But as I said, performance comes first and this blade has been developed as a high-performance workhorse, perfect for powering through summer root vegetables with easy. A robust spine gives the blade stability and heft while the "C" grind on the right-hand side of the blade helps with food release giving this blade a lovely balanced cutting feel, satisfyingly moving through produce while exhibiting very little wedging, bruising or splitting.
Forged from premium 1.2442 tungsten steel and hardened to approximately 64 HRC, the blade is incredibly tough and sharp and will retain its edge, with regular use, for a long time.
The blade is an absolute joy to work with and features stunning alloy banding revealed by the cloud patina. Inspired by these little details that come to light through the process of forging Antoine seems to intuitive pair his blades with stunning, tastefully selected handle materials. In this case an incredible stabilised, box elder burl classically shaped in the octagonal style with brass bolster and engraved name plate. The beautiful burl has been dyed with an array of colours that evokes the feeling of "Moonlight" and give this piece its name.
