This one-of-a-kind Chef Knife is the work of Tobias Hangler, the Austrian metallurgist and bladesmith behind Messerschmiede Hangler in Gratwein — and one of the three people who developed Apex Ultra. At 235mm the blade takes the Western chef's form, with a curved belly that rocks naturally through herbs and aromatics and a 56mm heel that keeps knuckles clear of the board. At 227.9g it carries real presence, and the balance sits right at the maker's mark, so the knife pivots where a pinch grip meets the blade.
The spine runs 5.09mm at the heel, through 2.48mm at mid-blade, to 1.15mm near the tip — a substantial backbone that stays composed through the rear while the front feels nimble, a taper that gives the blade versatility across every cut. Wide convex bevels move the blade through dense produce with little drag and superior food release. The blade is an eleven-layer composite of the metallurgist's own design: an Apex Ultra core with pure nickel, 75Ni8 nickel steel and 1.4034 stainless stacked either side. The nickel sits directly against the Apex Ultra as a diffusion barrier, insulating and protecting the high-carbon core through the heat of the forge weld. Worked with Tobias's Denty texture and etched, it reads as crisp bright contours — pale islands scattered across a mottled grey upper blade — while below the texture the bevel is taken to a clean matte polish, so the ornament stops where the cutting begins.
Apex Ultra, the low-alloy carbon steel Hangler helped design specifically for fine kitchen edges, is hardened here to 66 HRC — the range the alloy was built around. It takes an acute edge and holds it, sharpens cleanly on whetstones despite the hardness, and will develop a patina like any carbon steel. The handle is a hidden-tang Western round in two-tone Australian mulga, the timber's pale sapwood set against its dark heart, with a brass bolster drawing the two together.
The result is a Western chef's knife with a metallurgist's thinking behind every decision: a maker working in the steel he helped create, at the hardness he designed it to reach. Performance-first design that cuts beautifully. We are proud to carry Tobias's work, and this one is made to be kept.

We are happy to offer free international shipping on a variety of orders depending on location and order value.
Free Shipping Regions and Minimum Order Values
For Australia and New Zealand the minimum is $500AUD. For the rest of the world it is approximately €1000EUR. The discount is applied automatically when you reach the minimum cart value at checkout.
Returns
If you're not entirely happy with your purchase, you can return it within 14 days of delivery for a refund. The item must be in its original condition with all original packaging.

Faulty or Damaged Items
You must notify us within 5 business days of receiving your order. Photographic evidence of damage is required. Once approved, Modern Cooking will cover return shipping costs.

Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
