Japanese chefs consider the Kiritsuke a knife reserved for only the most talented chefs and an honour and privilege to use. Not because it is difficult to use, actually its a great all purpose knife, but because the profile lends itself well to the tasks that are usually left to the head chef. Slicing and garnishing. The profile is a little similar to a gyuto, but the belly is flatter like a Sujihiki making it better for slicing and push cutting.

The Sukenari Kiritsuke fits this description well. The edge has a decent flat section to the profile, with a slight curve beginning 3 quarters down the blade. Using the knife is a pleasure. The blade is well balanced for a pinch grip and has a nice amount of weight with out it being to light and flighty. The HAP40 steel confidently holds a razor sharp edge and at HRC64+/- the edge retention on these blades is exception.

With such high Rockwell hardness rating you might find yourself thinking about durability and sharpen-ability. Sukenari have built their reputation around forging with high-end super steels like HAP40 and ZDP-189 and are consistently recognised for their skill with these premium steels. That doesn't mean you don't have to take time to care for these knives and you shouldn't go hacking into bones of other hard materials, but the Sukenari blacksmiths have taken the time to heat treat these blades perfectly and they are very durable. Sharpening this knife take a little more time and effort than other premium stainless steels like R2/SG2, but you probably won't have to do it as often.

All in all the Sukenari Kiritsuke in HAP40 is a beautiful knife to work with and has been crafted by some of the best blacksmiths in the world. You won't be disappointed.
