Gyuto 220mm Carbon Pro Gidgee & 1.2419.05

A new profile from Oliver which takes cues from more classic Gyuto profiles. This blade is truly ready to work with a subtly radiused edge profile and santoku style tip, this is the kind of blade that happily goes to work in a professional setting and yet looks incredible in the home kitchen. Tapered geometry gives the blade versatility, and the lovely thin convex bevels offer great cutting performance, edge durability, food release, and easy maintainability.
After a recent visit to our Berlin showroom, we sent Oliver away with a piece of beautifully figured, ringed Gidgee from Australia. This stunning handle is the result. Oliver’s handles are some of the most beautiful and iconic designs in the business, taking inspiration from Bauhaus design and working with a range of unique materials and techniques they are beautiful, and ergonomic. This handle is complimented with aluminium and stainless-steel elements which look incredible and pair beautifully with the brushed and satin polished finish on the blade.
An unquestionably beautiful piece of work from this Modern Cooking favourite, artisan craftsman Oliver Märtens.

Product Care
Product Care
Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or premium reactive German and Swedish steels are susceptible to rust if not properly cared for. Keep the knife dry between uses and when storing for longer periods, wiping the blade with Tsubaki oil or another food-safe oil is a wise choice. A patina can be a beautiful personal feature on your knife and helps to stop rust forming.
Handle Care: For non-stabilised wooden handles, apply Tsubaki oil or another food-safe oil from time to time. Food-safe wax can be applied to both stabilised and non-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
