Like the 255mm RAN Chef Knife the 200mm has a western style blade shape, which tapers from the heal to the tip in a gradual arc. The balance point on this Yaxell RAN Chef’s Knife is more or less on the bolster and makes for comfortable use.
The blade edge is nice and sharp straight out of the box and the Damascus finish is stunning to look at. Craftsmanship on Yaxell knives is second to none and the black micarta handle feels great in the hand. The 200mm size is a very versatile blade length and is great for just about anybody regardless of your experience level or physical stature.
If you’re looking for a blade that will be versatile and comfortable for the entire family to use than this knife is perfect.
Yaxell Knives make some sensational kitchen knives and we keep a broad selection of their blade types, which make them perfect for anybody who would like to put together a set for professional or home use.
Ran series knives feature a core of VG10 super steel. The core is clad with 34 layers of soft and hard high-carbon stainless steel on each side of the blade. This produces a 69-layer rust resistant Damascus finish, which is both beautiful to look at and super sharp.
The blade is heat treated using a proprietary ice hardening technique, which results in a hardness rating of HRC61 on the Rockwell scale.
One of the great features of the Ran series of knives are the handles. Professionals love the hygienic, FDA-approved Canvas-Micarta handles. Canvas-Micarta is an odorless and extremely durable material made from resin and linen. This stuff last forever. The RAN handle comes in a deep black finish and is fixed with two stainless steel rivets and a custom hilt to aid in balancing the blade.
The RAN series combines western and Japanese style blades. Taking the best features from both. If you are looking for a great set of knives for at home or on the job these knives will more than satisfy your needs.
Established in 1932 Yaxell Knives have been developing high quality professional grade kitchen knives for over half a century. In the beginning all Yaxell product were 100% hand forged, but over the years the company has embraced the benefits of combining cutting edge technology with traditional techniques.
Today Yaxell still utilizes traditional sword making techniques in their production process and every knife is finished by hand. However, the company has developed proprietary ice hardening techniques that improve the hardness and durability of the knives and help to resist patina in high carbon steel.
Yaxell knives are some of the best quality professional grade knives available and are used by chefs around the world including a number one, two and three Michelin stared chefs.
The Yaxell Kitchen Cutlery Company is based in Seki, Japan. Seki has over seven centuries of sword and knife making tradition. Many of the black smiths that help create Yaxell knives are second and third generation blacksmiths and bring years of experience and knife make tradition to the Yaxell Product.
We have partnered with Yaxell to bring the Gou and Ran series to Modern Cooking and we think you will find these knives have great edge retention, balance and ergonomics.
