The classic Yaxell black canvas micarta handle is easy to maneuver and work in even the most challenging of fine paring work. The knife has a beautiful Damascus finish, which is stunning in the SG2 steel and is also decorated with chiseled kanji on the blade and the butt of the handle.

GOU series knives feature a core of Japanese SG2 (Super Gold 2) Micro Carbide powder stainless steel. The core is clad with 50 layers of soft and hard high-carbon stainless steel on each side of the blade. This produces a 101-layer rust resistant Damascus finish, which is both beautiful to look at and super sharp.
SG2 steel is a high carbon steel which, coupled with Yaxell’s proprietary ice hardening technique, results in a superior hardness of approximately HRC63+ Rockwell scale.
One of the great features of the GOU series of knives is the handles. Professionals love the hygienic, FDA-approved Canvas-Micarta handles. Canvas-Micarta is an odorless and extremely durable material made from resin and linen. This stuff last forever. The GOU handle comes in a deep black finish and is fixed with two stainless steel rivets and a custom hilt to aid in balancing the blade.
