Based in Takefu Japan, Takamura knives are a third generation family owned business. The three Takamura brothers took over from their father in recent years and have developed a reputation for producing excellent knives with great fit and finish. They tend to produce their knives from high quality steels and this Takamura Tsuchimi Santoku has a core of VG10 Super Steel and is clad in stainless steel with a tsuchimi or hammered finish.
Takamura knives have a reputation for producing very thin and light weight blades that feel nimble and slice with very little resistance. This Takamura Santoku is certainly no exception. The balance point on this blade is right over the heal of the blade and feels comfortable, light and easy to use.
The handles on these knives are simple functional handles. They feel comfortable in the hand and don’t have any rough edges. They are made out of a resilient black pakka wood.
All though I am sure that the likes of Gordon Ramsay and Rene Redzepi use many different knives it has been said that they have endorsed Takamura blades.
