This 250mm Gyuto features master blade smith Benjamin Kamon’s trademark Denty Kurouchi finish and has been fitted with a classic Kamon Knives removable, “Takedown”, Wa style handle crafted out of Walnut Burl and finished with Stainless steel “Torpedo” end caps.
Perhaps the most recognisable feature of a Kamon crafted knife is the handle. The contoured, faceted “D” shape handle feels luxurious in the hand and perfectly offsets the weight of the 250mm blade.
Speaking of the blade, while it is large in size, 250mm in length and just over 57mm heigh, the balance is perfect and the overall weight (235g) feels very comfortable. The geometry of this blade is super impressive. The spine, above the heal, is 4.6mm and tapers down to a phenomenal 0.01mm at the tip with a mid point measurement of 2.3mm. The blade is about 0.35mm behind the edge.
So, with some very sexy measurements, it is needless to say this blade cuts, it cuts very well and it does it in style.
