Ittetsu Honesuki 150mm Sandvik 19c27 3 layer Tsuchimi SanMaiIttetsu Knives
The Honesuki was designed specifically for breaking down chickens, but we often find these nimble, angular blades useful for all sorts of butchery tasks; Whether it's poultry, small game, or large tasks like deboning a pork shoulder this knife shape performs exceptionally well.
This Ittetsu Honesuki is forged in a 3-layer construction with a core of Sandvik 19c27, a high wear resistant steel, that takes a great edge. Like VG10 with a higher purity and edge potential. High wear resistance is certainly what you want in a good Honesuki. The knife often must make its way in between joints and will inevitably come up against bones (try to avoid bones!).
At 63HRC the blade is not soft and will take a very sharp edge, perfect for trimming connective tissue and fat, particularly when using the sharp and precise tip.
Clad in a wear resistant stainless clad and finished with a beautiful tsuchimi hammer pattern. The blade is both beautiful and highly functional.
We think the honesuki is one of the most underrated kitchen knives around and this one is a winner!
