Product Description

The blade profile on the 240mm Tojiro slicer from the Senkou range is similar to a Japanese Sujihiki. The long thin blade allows you to take long, even and consistent slicing strokes. This helps to avoid a back and forth sawing action, which can tear delicate meats like raw fish. The result is perfect clean slices. This knife is great for slicing raw fish, but you can use it on just about any meats that you would regularly use a carving knife on.

Like all of the Senkou range this slicer is constructed out of VG10 steel and has a beautiful 63 layer Damascus cladding. You will find that the blade is like a razor straight out of the box. Be careful this bad boy is sharp! The knife holds an edge well and even if you are using the knife consistently you will only need to sharpen it once or twice every three months. As with all knives you will need a set of whetstones and a honing steel to maintain this blade.

The handles on the Senkou range are also pretty beautiful to look at, but its the ergonomics that really standout. When you take the knife in your hand you immediately find that it fills your hand perfectly. The weight and balance on the knife gives you a sense of quality and craftsmanship. Made from FDA approved Micarta the handles are hygienically sealed and suitable for all environments regardless of your use case.
