Product Description

Solid build quality, high performance VG10 steel and bespoke, ergonomic handles are the key characteristics that make up the Tojiro 240mm chef’s knife. The blade on this Senkou series chef’s knife has a VG10 core which is finished in a 67 layer Damascus cladding. The blade looks amazing and is sure to catch your eye. The VG10 steel is fairly easy to keep sharp and holds an edge for a good amount of time. You will probably need to give it a sharpen on a whetstone once or twice every three months depending on the amount of use. A few strokes on the honing steel will help to maintain the edge in between sharpening.

We found the handles on these knives to be outstanding. The ergonomic design fits your hand very comfortably and the overall heft of knife gives you a sense quality. The handles are made out FDA approved Micarta so if you intend on using the knife in a professional capacity these knives are going to be hygienically speaking good to go. The blade has a 50/50 grind and the handle is designed for ambidextrous use, so regardless of whether you a left or right hand you will be comfortable using the Tojiro chef’s knife.

From the moment you pick up the knife you get a sense of the quality of the craftsmanship that has gone into it. Although the knives are not completely hand forged, Tojiro finishes every knife they make by hand making sure that they have no faults and are razor sharp straight out of the box. We have been using Tojiro knives in our kitchen for over 10 years and have never had anything less than a perfect experience. We are in good company, Heston Blumenthal also uses the Tojiro Senkou Chef’s knife and has officially endorsed the brand.
