Product Description

The 210mm Tojiro Chef’s Knife is constructed using a Suminagashi construction, which is a Japanese technique where the blacksmith places a very high quality and hard steel in the center of the blade and then forges a softer layer on either side other hard core. This technique is common these days as it allows blacksmiths to use high carbon and extremely hard steels for the edge of the blade, while protecting the knife with a softer more forgiving outer layer.

This Tojiro chef’s knife has a VG10 core which has been hardened to 62+ Rockwell, which is pretty hard. The harder the core steel is the sharper it can be and Tojiro gives the Senkou series a 30 degree edge angle, which is quite acute compare to industry standards of 40 degrees. The core steel is clad in a 63 layer Damascus, which protects the knife and adds a touch of style.

The Senkou series comes with a Micarta handles, which is made use linen and resin in hundreds of layers like the Damascus. The look great together. The handle has an exposed full tang, which gives the knife a unique and interesting look. Tojiro has considered ergonomics to and this handle is super comfortable to use and we felt that it had reduced fatigue over long hours in the kitchen.
