The Tojiro Chef Knife is forged with a VG10 core and 63 layer Damascus cladding. With a Rockwell rating of 62+ the knife’s edge is hard enough to take a very sharp edge and soft enough to be relatively easy to sharpen. The Damascus cladding is purely aesthetic, but with 63 layers it gives the knife a beautiful 3D effect that is certainly eye catching.
Each knife in the Senkou range (also known as “Flash” in some markets) has a beautiful ergonomic handle which feels great in the hand. The handle is constructed out of hygienic FDA approved Micarta and has unique exposed full tang giving the blade great balance and weight. The balance point on the Tojiro Chef knife is directly over the heel of the blade, which is perfect for pinch grip.
