The Nashiji line is a Takamura Hamono classic. Widely accepted as a Takamura innovation the Nashiji lines star feature is its Tsuchimi or hammered fishish, which gives the knives great food release properties along with reduced drag and tear. The 210mm Takamura VG10 Gyuto Nashiji is a seriously great knife from a 3rd generation master blacksmith.
The Takamura Hamono prides itself on its thin lite blades. They say their main focus is to produce blades which are as thin as possible in order reduce damage to the produce. The Takamura VG10 Gyuto from the Nashiji line not only has a super thin blade, but the VG10 core holds a great edge and the blade is razor sharp straight out of the box.
The spine on this knife measures just under 2mm thick and the overall weight of the knife is surprising light give the blade a super nimble feel to it. This lite weight feel coupled with what we would describe as perfect balance make this one of the best Gyutos available. It’s easy to see why rockstar chefs like Gordon Ramsay and Reni Redzepi love Takamura blades.
While the blade is the real star here, as it should be, the handles which are conservative in style compared to the blade are also very comfortable to hold. Constructed out of a hygienic black pakka wood. The handles are suitable for both professional and home use and we found them to be comfortable throughout a 12 hour shift.
