Sujihiki 240mm "Techno Bark" 52100
The striking "Techno Bark" CNC milled pattern is a totally unique stylistic feature on this ScheepersBuilt 240mm Sujihiki. Slightly reminiscent of the hammered Fujin pattern found on blades forged by Yu Kurosaki and other artisan blacksmiths. The “Techno Bark” texture strikes a balance, emphasising the high tech CNC elements used in the knives production while maintaining more rustic elements found in other hand forged blades. Like the ScheepersBuilt “Denty” Sujihiki this knife also features kurouchi finish and a hand sanded, satin edge band, which all results in a very unique and beautiful knife.
Edge to spine, end to end this knife is perfectly finished and smooth to touch. The spine and the choil have a matte kurouchi like finish that is smooth, but also gives a secure grippy feeling. The hand sanded satin edge band contrasts beautifully with the black kurouchi "Techno Bark" finish.
The 52100 steel has been hardened to 62+ HRC and the edge feels razor sharp. 52100 is a high carbon steel and will take a very nice edge and retention will be very decent. The profile on this blade has been refined to produce the best possible slicing performance, from the shallow blade hight, only 36mm, to the super thin convex grind.
The handle on this “Techno Bark” Sujihiki is the same as that found on the ScheepersBuilt “Denty” Sujihiki, a simple yet elegant black paper micarta handle with a hand milled brass bolster. The result is a beautiful and comfortable handle that gets out of the way and allows the blades looks to really shine. The black paper micarta feels amazing in the hand and is a super durable material. The bespoke octagonal shaped handle has the angles in all the right places.

Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.
Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.
Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or one of the many premium reactive German and Swedish steels are susceptible to rust if not properly cared for. In this case we advise that you keep the knife dry between uses and when storing the knife for longer periods wiping the knife blade with Tsubaki oil or another food safe oil is a wise choice. This will not stop a patina forming on the blade, but it will stop rust. A patina can be a beautiful personal feature on your knife and helps to stop rust forming. So, dry your knife regularly between uses, store in a dry place and apply some Tsubaki oil from time to time when storing for long periods.
A reference guide to steel types
Handle Care: If you have a knife with a non-stabilised wooden handle, you can apply Tsubaki oil or another food safe oil to your handle from time to time. Food safe wax can be applied to both stabilised and no-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
