Gyuto 190mm Mono Steel 1.2419.05 Limited Edition

$553.00

Oliver Märtens continues to impress with his new signature series. This time we have a classy black stabilized beech and reindeer antler combination. Its the little details that shine through on this collectible kitchen tool though, like the satin stone finish on the blades edge band. Somehow this silky satin finish pairs perfectly with the more natural elements on the handle and just shows how much of a thoughtful and creative industrial designer Märtens truly is.

Also, for the first time, we find a new branding on this knife. Oliver has placed his initials in the center of a diamond shaped brand, which you will find on the opposite side of the blade to his classic oel brand.

The handle has been paired with a classic oel hand forged Gyuto. A tall profile with a pointed k-tip. A fine needle like tip completes an aggressively tapered spine, which gives the knife versatility. At the edge you will discover an extremely thin and sharp primary bevel, subtly curved and a delight to work with on the cutting board.

Oliver Märtens knives are a pleasure to work with and you will quickly find that you love to reach for it in a multitude of situations. The blade is finished with touch of forged finish, which extends from the top of the bevel to the spine. It’s a beautiful shimmering texture that completes the composition perfectly and provides a lovely piece of contrast with satiny smooth stone finished edge band.

Product Care:

Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.

Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.

Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or one of the many premium reactive German and Swedish steels are susceptible to rust if not properly cared for. In this case we advise that you keep the knife dry between uses and when storing the knife for longer periods wiping the knife blade with Tsubaki oil or another food safe oil is a wise choice. This will not stop a patina forming on the blade, but it will stop rust. A patina can be a beautiful personal feature on your knife and helps to stop rust forming. So, dry your knife regularly between uses, store in a dry place and apply some Tsubaki oil from time to time when storing for long periods.

Handle Care: If you have a knife with a non-stabilised wooden handle, you can apply Tsubaki oil or another food safe oil to your handle from time to time. Food safe wax can be applied to both stabilised and no-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
