Bunka 165mm 1.2419.05 with Micarta Handled, V2A Pin and Bolster

$482.00

Simply put, Oliver makes beautiful objects, that cut! It’s all about form with a deep consideration for performance and ergonomics. We recently spent time discussing the faceting and design concept behind Oliver’s handles. The design is constantly evolving and improving, from the materials used to the dimensions and ergonomics. The handle gives Oliver’s knives a nimble, agile feeling, making use of the aggressive profile and giving the knives an almost surgical cutting experience. Featured on some of Oliver’s recent work, the handle has been given a textured, three notch gripping point that gives you a tactile sensation and locates the fingers when you take the knife in hand. It’s a comforting sensation and just feels right!

Although similar to the classics, Oliver’s profiles are unmistakably unique and recognizably his. Elements like the height of the blade at the heel, the relatively aggressive distal tapering and the extremely thin, needle like k-tips set these profiles apart from many of the more classic designs. These are not heedlessly taken design choices and anyone who has used one of Oliver’s knives will tell you the knives are a pleasure to use.

This bunka features a 165mm blade length and has been paired with a durable micarta handle. V2A pin and bolster completes the pairing. The handle has a luxurious matte finish and the new three notch textured gripping point is a very satisfying contrast to the silky-smooth matte finish. Another beautiful piece from Oliver that is sure to make some lucky cook very happy.

Product Care:

Cleaning: Clean by hand with warm water. Avoid wetting the handle when possible.

Sharpening: We advise using whetstones to sharpen your knives and a honing rod or steel to maintain the burr between sharpening sessions.

Reactive Steels: Reactive steels like Aogami Super, Apex Ultra or one of the many premium reactive German and Swedish steels are susceptible to rust if not properly cared for. In this case we advise that you keep the knife dry between uses and when storing the knife for longer periods wiping the knife blade with Tsubaki oil or another food safe oil is a wise choice. This will not stop a patina forming on the blade, but it will stop rust. A patina can be a beautiful personal feature on your knife and helps to stop rust forming. So, dry your knife regularly between uses, store in a dry place and apply some Tsubaki oil from time to time when storing for long periods.

Handle Care: If you have a knife with a non-stabilised wooden handle, you can apply Tsubaki oil or another food safe oil to your handle from time to time. Food safe wax can be applied to both stabilised and no-stabilised wooden handles. Never apply hot wax or oil as you risk warping or damaging the handle.
