This limited-edition, small-batch Gyuto represents the intersection of modern performance and timeless craftsmanship. Handmade by artisanal bladesmith Simon Krichbaum, this MCx Design Studio collaboration reinterprets the Japanese Gyuto with a distinctly contemporary profile. The blade features an aggressively tapered spine and a finely pointed tip, delivering versatility for precise, agile work. The full grind geometry ensures low drag and excellent food release, with bevels that carry an exceptionally clean, brushed belt finish. Every detail—from the continuous taper to the precise alignment of the grind lines—reflects Krichbaum’s mastery and an uncompromising pursuit of cutting performance.
Constructed using a GoMai configuration, the blade combines an Apex Ultra core with stainless steel cladding and a nickel diffusion barrier—a pragmatic yet elegant solution balancing edge retention, toughness, and corrosion resistance. The result is a high-performing, responsive blade that glides through ingredients with remarkable ease. At 192 grams, the knife’s balance point sits comfortably forward of the choil, enhancing control during extended prep sessions. The spine transitions smoothly from a robust 4.25 mm at the heel to a fine 0.97 mm at the tip, producing both stability and precision.
