Gyuto 240mm GoMai Graphite Live Edge Amboyna Burl
Iconic design, exceptional forge craft and ultra-fine, high-performance geometry. Leszek Sikoń has been supplying the culinary world with some of the finest kitchen knives available for quite a few years now and his work has proven itself as exceptional.
This blade is remarkably thin, with wide convex bevels. Very fine and sharp. At the edge it’s a bellied radius, which lends itself well to push cuts and rockchops, combined with the super fine edge this knife is perfect for fine slicing, cutting herbs and other delicate produce. A combination of mild steel, nickel and 26c3 “Spicy White” Swedish steel, which takes a great edge, features decent retention and easy maintainability.
The handles on Leszek’s knives are a testament to his skill as a blacksmith, a forged integral bolster with a sculpted design that it is reminiscent of chipped slate or “Graphite” as he describes them. It’s a beautiful design that transitions into a tapered octagonal shape. This handle is made from a stunning piece of Amboyna Burl. As a salute to natures work Leszek has left the end of the handle natural or “LIVE” and it’s a stunning piece of work.
