When it comes to an Oblivion Blades kitchen knife it can only be said that the profiles that Jezz forges are unique, creative designs. Were it counts, performance is an absolute priority. If you are not familiar with Jezz’s professional history, let me just say that he is uniquely suited to knife making.
Jezz has experience as a professional chef and as a machinist, welder and fabricator. A lethal combination when it comes to knife making.
This 240mm Gyuto is forged in 120 alternating layers of 1084 & 15n20 and features some very nice curves. The blade is on the lighter side where weight is concerned, but its no laser. You could only describe it as that perfect balance between workhorse and laser. Nice and thin behind the edge, reasonably thick at the spine above the heel, but tapered to a needle point at the tip.
As I pointed out already, the profile is a unique one. In terms of the cutting experience there is a nice flat section before that aggressive angle towards the tip. It’s a very enjoyable, functional cutting action. Totally, performance first!
The handles on an Oblivion Blade are the very definition of Wabi Sabi, ugly beautiful. This handle feels amazing in the hand. The finish on the Ironwood is a beautifully smooth matte that just feels great. The chamfered flats on the top and bottom make pivoting the blade in your hand a breeze.
Overall, a very cool looking, nimble, high-performance kitchen knife.
