This handcrafted Gyuto embodies the performance-driven philosophy at the centre of Modern Cooking’s design philosophy, brought to life through the skilled hands of Dutch bladesmith Jeroen Knippenberg. Every element of the knife—from its assertive profile to its material choices—reflects a deliberate focus on capability and control. The contemporary Gyuto silhouette is defined by a confident 59 mm blade height and a powerful 5 mm spine at the heel, tapering progressively to under 1 mm near the tip. This geometry provides rock-solid stability at the base while granting the fine tip remarkable agility for precision work. Forged in Apex Ultra mono-steel and finished in a clean satin polish, the blade conveys a sense of refined strength.
The cutting performance is shaped by a meticulously executed convex grind that balances durability, food release, and versatility. This grind allows the knife to excel across a wide variety of ingredients—dense roots, proteins, leafy greens—without feeling specialised or restrictive. The pronounced distal taper and thoughtful weight distribution (295 g) give the knife a dynamic yet planted presence on the board, offering feedback and authority without sacrificing speed.
