A new 265mm sujihiki from Australian knife makers Scheepersbuilt. Forged in 52100 premium carbon steel, with a “Fluted Ornamental” S-grind and an incredibly thin convex ground bevel this is an incredibly high-performance slicer. The 52100 steel takes a great edge and features very good retention and toughness.
