A meticulously crafted Gyuto designed to meet the highest standards of professional and home chefs alike. With a 229mm edge length, this Gyuto is built for versatility and precision. The blade is forged from 135Cr3 steel with a three-layer San Mai construction, and an incredibly tight twist Damascus cladding (150 layers of wrought iron and 135Cr3 folded and twisted together).
Designed for superior performance, the knife features a full convex geometry, completed on whetstones. Milan worked the initial geometry on 100#-200# grit flat and convex stones, a skill that he acquired while training with expert sword polisher Damian Kordic. This is an extremely challenging process and requires the blade to be regularly straightened. The process also requires that the blade is forged extremely precisely, or it simply won’t be possible to complete an even polish.
Once the initial geometry was complete, the remaining work was done on convex stones from 400# through to 6k and finally polished with a mid-hard uchigumori natural stone and two types of finger stones, one soft made of uchigumori and one hard made of nakayama. The detailed hand-polishing process ensures an impeccable, even finish that enhances both performance and aesthetics.
