This is, not only true in terms of knife safety, but also in terms of their usability. If you are just starting to think about this practice, then these King whetstones with their #1000/#6000 grit combination is a cost effective, high quality option.

As you progress in terms of knife sharpening skill you may want to expand your collection of stones to include #200, #400 and even #800 grit stones that allow you to repair chips in the blades of your knives. However, to get started a #1000 grit is perfect for refreshing the burr on your knives and the #6000 grit is a good starting point for polishing or stropping the blade.

Made in Japan, King sharpening stones have a reputation for being high quality cost effective synthetic whetstones. This entry level combination stone, while cheap is certainly not cheap in terms of quality. After a few strokes of the blade across the #1000 grit side you will notice that the edge develops a solid burr even on the hardest of steels and the #6000 grit polishing side of the stone quickly gives the blade edge a refined mirror shine.

Briefly describing the more technical characteristics of these King whetstones, we found that it has good level of tactile feedback allowing the user to get a sense of how well the stone is cutting away material. The stone is densely packed with high quality abrasive material and minimum of bonding agent, which results in very little loading and wearing.

The width of the stone is by no means a professional width, but it is wide enough to allow for an efficient stroke pattern and the depth of each side is certainly reasonable considering the price. We feel that the stone should remain thick enough to use many years under typical home use.

These King whetstones are soaking stones and require around 15-minute soaking time in water before use as well as an occasional splash during use. Firstly, is its association with the origins of Damascus steel. The truth is that nobody really knows where Damascus steel came from or how it was originally produced. Today when we refer to Damascus, we are most commonly referring to pattern wielded steel, the layered steel produced by wielding various soft and hard steels together.

Wootz steel refers to crucible steel. It is made by melting a combination of elements in a crucible to form a small ingot of high carbon steel that is then forged and thermal cycled in a specific manner that leads to highly refined carbide bands that produce the final pattern when the steel is etched.

The high carbon content and the refined carbides can produce extremely tough steels that take very fine edges. The problem is that in most cases it is truly difficult to know the final content of a crucible steel and it is possible that the carbon content is much lower than often predicted.

Jezz at Oblivion Blades has each of his ingots tested to know precisely how much of each element is contained within. This blade contains a very reasonable 1.6C 0.4W 0.35Cr, it’s a very decent piece of Wootz.

So, with the technical stuff out of the way, a little about the blade itself.

Firstly, for a Nakiri you might see the angled handle as a little unorthodox, but the angle is perfectly suited to the profile of the blade which tapers towards the nose of the knife. In use this geometry actually relieves tension in the wrist, and I believe would reduce fatigue over time.

If you know the origins of the Nakiri, it was first developed as an easy-to-use vegetable knife, mainly for the home. The knife was modelled on the Japanese Usuba, which is used for a particular cutting style called Katsuramuki or Rotary Pealing a technique that involves holding a piece of vegetable in one hand and peeling away a thin layer by rotating the vegetable against the blade while moving the knife in a subtle, up and down motion. In my limited experience with this technique I believe the angled design would make this process a little easier.

The blade is very thin at the edge, about 0.2mm, and remains fairly thin for about 1cm above the edge, giving the knife a razor like property that is perfect for vegetable prep. The knife is nicely balance for a pinch grip and the balance point sits precisely on the Oblivion Blades, makers mark.

Crucible steel or Wootz is a very labour-intensive steel to produce and to find a premium kitchen knife of this standard in such a unique high carbon steel is an absolute rarity. Additionally, the hamon that Tomislav has created on this blade is also very unique.

More generally speaking, like all of Tomislav’s work, this is a very high-performance blade with a nicely finished convex grind and a lovely profile. In keeping with the Radiona Breg style the blade also features a highly tapered spine that ends in a needle like tip.

I’ve given Tomislav praise for his handle profile before, but as if to show off, he has managed to secure a very nice Almond and African Blackwood combination for this beautiful knife. Continuing the creative and unique design to the end, the knife also features a beautiful Saya constructed out of walnut and finished with a very cool flat style pin.

Tomislav is creating some truly unique work, his fit and finish and geometry are some fo the best around. it’s a pleasure to be able to work with him and to be able to offer such amazing knives on Modern Cooking.

//cdn.shopify.com/s/files/1/0581/7273/5626/products/Radion_Breg_Gyuto_225mm_Honyaki_1.2562_-_Blade__67314.1639752046.1280.1280.jpg?v=1754647804
