Here we have a Martin Huber Santoku 180mm. The blade is forged from house made Damascus 1.2842, 75Ni8, C100. Like sonic waves in hues of black, grey, and silver, the layers stretch across the blade.
The edge begins with a flat that extends for about 30mm, which is followed by a subtle curve that gradually rises to meet the needle like tip. A rigid and stable spine, with very little tapering completes the profile. The blade has a confident feel about in on the board with a satisfying weight and a beautifully sharp edge.
Martin Huber always uses the most premium of materials in his knives, from his house made steels to the beautiful, stabilised woods he uses in his handles. This blade features a stabilised poplar and bog oak handle with a G10 spacer. A black and gold fiery beauty!
Martin makes a range of handle profiles, but we tend to request his tapered rokkaku hanmaru. It’s a beautiful, facetted handle with fantastic ergonomics.
