This 250mm gyuto is one of a kind, and it carries that thinking into a three-layer composite, or \u003cstrong\u003esan-mai\u003c\/strong\u003e, construction, with a multi-bar twist damascus cladding of Antoine's own making, forged from 1095 and 15N20, over an Apex Ultra core.\u003c\/p\u003e\u003cp\u003eA spine of 3.82mm at the heel tapers through 1.8mm at mid-blade to 1.03mm behind the tip, and at 204g the knife is light for a 250mm blade — composed and stable through the rear, increasingly deft toward the front. The convex bevels carry it through dense ingredients with very little drag and release food cleanly, and 60.48mm of height at the heel keeps knuckles well clear of the board. The finish follows the forging — textured kurouchi from the spine down to the top of the bevels, with the pattern showing through it, while the bevels themselves are taken down on stones to an even, consistent satin and then deeply etched to draw the \u003cstrong\u003etwist damascus\u003c\/strong\u003e out in fine contour lines, the Apex Ultra core emerging as a clean line along the edge.\u003c\/p\u003e\u003cp\u003eThe handle is a mono-block octagon in Antoine's classic style, cut from green Raffir Alume — an aluminium mesh set in translucent coloured resin, so the metal reads as a shifting three-dimensional grain beneath the surface rather than a pattern printed on it — and finished against a bead-blasted stainless bolster and name plate.
