Really! No introductions necessary for this Echizen master. A long-time supporter of Modern Cooking, we have been working with Yu Kurosaki Knives for close to 10 years.

The youngest blacksmith to ever attain the title of Master, Yu Kurosaki is considered a Rockstar in the Japanese knife making industry. His premium level of fit and finish and undeniably cool style have shone a light on the blacksmiths of Echizen, Japan. To own a Kurosaki knife is to own a piece of Japanese knife making history.

The highly sort after kitchen knives forged by Japanese blacksmith Yu Kurosaki come in several different tsuchimi hammered patterns, including Shizuku, Senko, Fujin, Raijin and Juhyo. Each hammered finish has been inspired by the Japanese gods and nature. The Tsuchimi hammered patterns are both beautiful and functional as they reduce the likelihood that food will stick to the face of the blade as you work with the knives.

Fredrik Spåre

Hand crafted in Sweden

For Fredrik Spåre knife making began as a way to bond with his father. A simple knife making course, over a weekend in the 90s. For Fredrik the process of creating something from raw steel and wood was inspirational and over time knife making developed into a hobby. Fredrik made kitchen knives and hunting knives for friends and family and eventually knife making became a profession.

Today Fredrik mainly makes kitchen knives. From start to finish every step is completed in house, from steel making and forging, grinding, and sharpening to handle construction and fitting. Fredrik uses mostly Swedish steel from Uddeholm and Sandvik as well as locally sourced handle materials.

In our experience, at Modern Cooking, Fredrik's knives feature premium fit and finish, artisan design and performance. Details like hand hammered bolsters, high performance geometry and ultra-high HRC in his Honyaki and Mono steel blades make these knives well worth your consideration. Very good quality and value!
